BBQ chicken with avo, zucchini salad

EASILY feed a family of five with this tasty barbecue chicken with avacoda and zucchini salad recipe.


  • 1 tspn ground cumin
  • 1tspn ground coriander seeds
  • 1tspn smoked paprika
  • 1 tspn turmeric powder
  • 2 chicken breasts
  • 2 zucchini
  • bunch of asparagus
  • 1 avocado
  • 3 tbspns balsamic vinegar
  • 2 tbspns olive oil
  • ½ cup fresh coriander leaves


1.Pound chicken to 1cm thickness, slice zucchini long ways into long pieces, trim ends off asparagus, slice avocado into medium pieces

2.Preheat webber/bbq to medium heat

3.Mix the cumin, coriander seeds, paprika & turmeric powder with salt and pepper. Use to season chicken

4.Place chicken on webber to grill for 2-3mins each side and allow to rest for 2mins

5.While chicken is cooking, toss asparagus and zucchini in a little oil, salt & pepper & char-grill for 2-3mins

6.Remove vegetables from webber & cut asparagus in half & chop zucchini into medium chunks

7.In a bowl, whisk half the avocado with balsamic vinegar then slowly add oil. Toss in grilled veggies and the remaining avocado. Plate up

8.Slice chicken on an angle and lay over plated salad garnish with salt, pepper & fresh coriander leaves
