WHO doesn't love getting breakfast in bed? On Father's Day this Sunday, why not get creative in the kitchen and make dad's day with these easy-to-make egg and bacon pies.
Developed by Australian Eggs, this striking brekkie is guaranteed to satisfy dad by incorporating every man's favourite breakfast ingredients, bacon and eggs, and turning them into a mouth-watering meal.
Combining nutrient-packed eggs, tasty bacon, extra-light sour cream and fresh parsley, these egg and bacon pies are a filling, delicious start to the Father's Day festivities.
Presentation is a breeze - just place these tasty pies on a rustic chopping board and you're good to go.
Egg and bacon pies
Prep time: 10 minutes Cooking time: 20 minutes
4 sheets of frozen filo pastry, thawed
2 rashers of bacon, eye part only
4 tbsp extra-light sour cream
4 sprigs parsley, chopped
Pepper to taste
Cooked spinach for serving
Preheat oven to 180 degrees. Spray four compartments of a muffin tray with oil, cut the pastry into quarters (or to size) and gently press the pastry into the muffin tin.
Place bacon on to a baking tray and cook in the oven for 3-4 minutes or until done.
Place on to a kitchen towel to drain and cool.
Cut each rasher in half and place one half into the base of the pastry shell.
Mix sour cream, parsley and pepper together and spoon over the bacon. Crack egg over the sour cream mixture.
Place in the oven and bake for 15-20 minutes or until cooked.
Remove from oven, carefully remove pastry from tin and serve with cooked spinach.
