High praise for mandarins

IF you think a mandarin’s only place is in a lunchbox then Kim McCosker wants you to think again.

The Sunshine Coast chef and co-founder of the 4 Ingredients cookbooks has been appointed the ambassador for Citrus Australia’s 2011 Aussie mandarin campaign.

“They are so much more than just a lunchbox food,” Ms McCosker said.

“They can be incorporated into everyday meals for added nutritional benefits and flavour. A little bit of imagination goes a long way.”

She may have been born in the heart of apple country in Stanthorpe, but the humble mandarin has always held a special place in Ms McCosker’s kitchen.

Her family moved to a citrus farm in Mundubbera, west of Bundaberg, where she grew up surrounded by the orange fruits.

“Mum would infuse everything with mandarin juice or zest,” she said.

“She’d chop up pieces in pancakes, use the zest and make these amazing mandy muffins with pieces of mandarin in the middle. She’d use the juice in fruit ice blocks and we loved having those in summer.”

As well as adding a twist to popular favourites, Ms McCosker said the addition of mandarins into the kitchen brought health benefits.

“The juice and the zest can be added to almost anything and it cuts out the need for lots of added sugar,” she said.
