Dessert king Reynold's triumphant return to MasterChef

REYNOLD Poernomo is living proof you don't have to win MasterChef to make a career in food a reality.

The young cook, who was dubbed the dessert king of last season, returns to the show tonight to set a pressure test for the three under-performing cooks from last night's challenge.

Since finishing fourth on the reality cooking show last year, Reynold hosted several popular pop-up restaurants before joining forces with his brothers Arnold and Ronald to open Koi Dessert Bar at the end of the trendy new Spice Alley in Sydney's Chippendale.

"Before MasterChef I was thinking that I'm definitely going to have a dessert bar in the next 10 years; that was my goal," he told APN.

"All of a sudden we have this (Koi). It's gone really quickly."

Since opening its doors in January, Koi has received acclaim for its range of desserts - created and prepared by Reynold - and its dinner degustation menu created by Arnold.

Reynold has six delicious and delicate dishes on the menu - including the refreshing apple with apple wood ice cream, artichoke crisp, brown butter crumbs, schnapps jelly and dulce - and has seven more in various stages of development.

One of Koi's signature dishes will form the basis of tonight's pressure test.

"It was a nostalgic moment for me because a lot happened in that kitchen," he said.

"I loved it but I missed being on the other side with the contestants... I felt a bit awkward (standing with the judges)."

Reynold had plenty of advice for this year's MasterChef class.

"I told them to just take it slow," he said.

"I wanted them to build on their foundation, that's the most important thing. They've got to learn to step back and know their limits, and as well don't put so much pressure on themselves.

"It was a lot of fun (being on MasterChef last year) but we took it way too seriously."

MasterChef airs tonight at 7.30pm on Channel 10.
