Perfect winter warmer: pumpkin flan

WHAT a perfect winter warmer.

Ingredients: 

  • 1-2 sheets wholemeal pastry
  • 300g cooked pumpkin (cold)
  • ½ small onion
  • 1 clove garlic
  • 2 eggs
  • 150mls thickened cream
  • ¼ cup grated parmesan cheese
  • paprika

Method:

  1. Cut 300g pumpkin into medium chunks and cook on stove until soft, refrigerate until cool
  2. Fit pastry to square dish and blind bake in oven 180ºC for 10mins (baking paper fitted over pastry with rice on top to partly cook pastry)
  3. Cut onion and garlic into small pieces
  4. Remove pastry and take off rice & paper and return pastry to oven for 5mins
  5. Blend pumpkin, onion and garlic until smooth
  6. Add eggs, cream and cheese and blend until combined
  7. Pour mixture into flan, sprinkle with paprika and bake for 20mins or until set
