YOU can do so much with the good old-fashioned pancake.

You can have them for brekkie or for dessert - well, to be honest, you can have them anytime of the day I reckon.

The array of toppings you can have on them is endless. Does anyone remember O'Rileys Pancake Pizza and Pasta Parlour that was an icon in Hervey Bay for more than 20 years?

Dan and I certainly do, as we both worked there. They had the most delicious caramel butter, banana, cream, ice cream and nut pancake - oh gosh it makes me drool.

We created a beautiful pancake breakfast the other day that wasn't too sweet and pretty healthy.

Give these a go this weekend. It includes fresh berries (not those frozen ones - let's be safe shall we), fresh figs, greek yoghurt, honey, coconut and a cinnamon pancake - so delicious. I feel like some of these now - pregnancy cravings.

Cinnamon pancake with fresh berries and figs

INGREDIENTS:

 1 punnet raspberries  

 1 punnet of blueberries  

 3 fresh figs  

 3 tbs of honey  

  1/3 cup of shredded coconut, toasted  

 1 x small tub of natural greek yoghurt  

 140g of plain flour  

 1 tsp of ground cinnamon  

 3 tbs of brown sugar  

  ½ tsp of salt  

  ½ tsp of baking soda  

 1 large egg  

 300ml of milk  

 1 tsp of vanilla paste or extract.

METHOD:

In a large bowl combine flour, sugar, cinnamon, baking soda and salt. In a jug whisk together egg, milk, vanilla paste. Make a well in the centre of the flour mixture and with electric beaters slowly pour the wet into the dry. Whisk until it's a smooth batter.

In a large frypan, bring to medium to high heat, spray with non-stick oil. Spoon on a good amount of batter until you reach the size you want.

Wait until there are some bubbles forming on top, then flip the pancake, cook for a further 2-3 mins - repeat with remaining batter. While pancakes are cooking, prepare your toppings. Then top each pancake with berries, figs, then a couple of tablespoons of greek yogurt, a sprinkling of toasted coconut and then a drizzle of honey. Serves 2 (will make 4-6 pancakes depending on size).
