Lime and peanut chicken
Ingredients
â5 Lenard's thigh fillets cut into strips
âž cup unsalted peanuts
âginger grated
â2 cloves garlic, finely chopped
â2 tablespoons oil
â4 green onions sliced
â3 tablespoons fish sauce
âJuice and zest of two limes
âChillies, deseeded and sliced (optional)
â2 teaspoons sugar
â1 bunch coriander, chopped
â½ cup basil leaves

Method
Use a food processor to grind the peanuts, ginger and garlic into coarse crumbs.
Cook on a barbecue hot plate in hot oil until fragrant.
Add the chicken and cook until golden.
Add onions, fish sauce, juice and zest of limes and chilli.
Taste and add sugar as necessary.
Spoon into serving dish and stir through coriander and basil leaves. Serves four.
